1 lb beef chuck, cut into 1-inch cubes

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

4 cups beef broth

2 large potatoes, peeled and diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

1 cup potato gnocchi (store-bought or homemade)

1 cup frozen peas

Chopped fresh parsley for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.

    In the same pot, add diced onion and garlic, sauté for about 2-3 minutes until translucent.

      Add the sliced carrots and diced celery, cooking for another 5 minutes until slightly softened.

        Return the browned beef to the pot and pour in the beef broth. Add the diced potatoes, dried thyme, dried rosemary, bay leaf, and bring to a gentle boil.

          Reduce the heat to low, cover, and let it simmer for about 1.5 hours, until the beef is tender.

            After 1.5 hours, add the potato gnocchi to the stew and cook for an additional 5-7 minutes until the gnocchi are cooked through and fluffy.

              Stir in the frozen peas and cook for another 2-3 minutes. Adjust seasoning with salt and pepper as necessary.

                Remove the bay leaf before serving and garnish with chopped fresh parsley.
