4 large Yukon Gold potatoes, peeled and diced

6 cloves of garlic, minced

1 medium onion, finely chopped

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free version)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and cook for an additional 2 minutes until fragrant, making sure the garlic doesn’t burn.

      Add the diced potatoes to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer.

        Cover the pot and let simmer for about 20 minutes, or until the potatoes are tender when pierced with a fork.

          Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer batches to a regular blender.

            Return the soup to the stove over low heat and stir in the heavy cream (or coconut milk) and thyme. Let it warm for another 5 minutes.

              Season with salt and pepper to taste. Serve hot, and garnish with freshly chopped chives or parsley.
