4 large potatoes, peeled and cubed

1 cup shredded mozzarella cheese

1/2 cup all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (panko for extra crunch)

2 large eggs, beaten

Vegetable oil (for frying)

Start by boiling the cubed potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and allow them to cool slightly.

    Once the potatoes are cool enough to handle, mash them in a large bowl until smooth.

      Stir in the shredded mozzarella cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until fully combined.

        Using your hands, take a portion of the potato mixture and shape it into a stick (about 4 inches long and 1 inch thick). Repeat until all the mixture is formed into sticks.

          Set up a breading station: Place the flour in a shallow dish, the beaten eggs in another, and the breadcrumbs in a third.

            Dredge each potato stick first in flour, then dip in the beaten eggs, and finally roll in the breadcrumbs until fully coated.

              Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully place a few potato sticks in the oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

                Remove the fried sticks and let them drain on paper towels. Repeat the frying process for the remaining sticks.
