4 large Portobello mushroom caps, stemmed and sliced into fry shapes

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs, beaten

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

Olive oil spray or oil for frying

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a shallow bowl, mix together the flour, garlic powder, paprika, salt, and black pepper.

      Set up a breading station with three bowls: one with the flour mixture, one with the beaten eggs, and the third with a mix of panko breadcrumbs and grated Parmesan.

        Dip each Portobello fry first into the flour mixture, making sure it's fully coated. Shake off any excess.

          Next, dip it into the beaten eggs, allowing it to soak briefly.

            Finally, coat the fry in the panko and Parmesan mixture, pressing gently to ensure it adheres.

              Place the coated fries on the prepared baking sheet, ensuring they are not touching each other for even cooking.

                Spray the fries lightly with olive oil spray or drizzle a little oil over them.

                  Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

                    Remove from the oven and let cool slightly before serving.
