4 bone-in pork chops

6 medium-sized potatoes, thinly sliced

1 cup of sharp cheddar cheese, grated

1 cup of heavy cream

1 cup of vegetable broth

1 onion, thinly sliced

3 cloves garlic, minced

2 teaspoons dried thyme

2 teaspoons dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium-high heat. Season the pork chops with salt, pepper, and half of the thyme and rosemary. Sear the pork chops for about 4 minutes on each side, until they are golden brown. Remove and set aside.

      In the same skillet, add the sliced onions and garlic. Sauté for about 3-4 minutes until softened and fragrant.

        In a greased 9x13 inch casserole dish, begin layering the sliced potatoes at the bottom, slightly overlapping each slice.

          Sprinkle half of the sautéed onions and garlic over the potatoes, then season lightly with salt, pepper, and the remaining thyme and rosemary.

            Place the seared pork chops on top of the potatoes.

              Pour the vegetable broth and heavy cream evenly over the entire dish.

                Sprinkle the remaining onions and garlic on top, followed by the grated sharp cheddar cheese.

                  Cover the casserole dish with aluminum foil and bake for 30 minutes.

                    After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden.

                      Allow the casserole to cool for a few minutes before garnishing with fresh parsley.
