2 lbs beef chuck roast

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon onion powder

1 tablespoon smoked paprika

2 teaspoons salt

1 teaspoon black pepper

1 cup beef broth

2 tablespoons Worcestershire sauce

1 tablespoon balsamic vinegar

Instructions
 

Preheat your oven to 300°F (150°C).

    In a small bowl, combine the minced garlic, rosemary, thyme, onion powder, smoked paprika, salt, and black pepper; mix well to create a seasoning blend.

      Rub the olive oil all over the beef chuck roast, and then coat it with the seasoning blend, making sure to cover all sides for maximum flavor.

        Heat a large, oven-safe skillet or Dutch oven over medium-high heat. Once hot, sear the roast on each side for about 3-4 minutes until a crust forms.

          Remove the roast from the skillet and set aside. In the same skillet, pour in the beef broth, Worcestershire sauce, and balsamic vinegar, stirring to combine.

            Return the roast to the skillet, ensuring it's partially submerged in the liquid.

              Cover the skillet with a lid or aluminum foil and place it in the preheated oven. Bake for 2.5 to 3 hours until the meat is fork-tender.

                Once cooked, remove the roast from the oven and let it rest for 10-15 minutes before slicing.

                  Serve thinly sliced, drizzled with the pan juices for extra flavor.
