4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup mushrooms, sliced (cre mini Bella or button)

4 cups vegetable broth

1 cup heavy cream

1 tablespoon fresh dill, chopped (plus extra for garnish)

2 tablespoons olive oil

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Add the minced garlic and sliced mushrooms to the pot, cooking until the mushrooms are tender, around 5 more minutes.

      Stir in the diced potatoes and vegetable broth. Season with salt and pepper, then bring to a boil.

        Once boiling, reduce the heat and let it simmer uncovered for about 20 minutes, or until the potatoes are fork-tender.

          Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of it and leave the rest as is.

            Stir in the heavy cream and fresh dill, cooking for an additional 5 minutes to heat through and blend the flavors. Adjust seasoning with salt and pepper as desired.

              Serve hot, garnished with fresh dill and chopped chives.
