1 cup shelled pistachios, roughly chopped

1 ½ cups all-purpose flour

½ cup whole wheat flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon

¾ cup granulated sugar

2 large eggs

½ cup Greek yogurt

½ cup milk

⅓ cup vegetable oil

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Set aside.

      Mix the Wet Ingredients: In a large mixing bowl, beat together the granulated sugar and eggs until light and fluffy. Add the Greek yogurt, milk, vegetable oil, vanilla extract, and lemon zest. Mix until well combined.
