Ingredients

20 pink Oreo cookies, crushed (plus extra for garnish)

4 tablespoons unsalted butter, melted

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup pink food coloring (adjust to desired shade)

1/4 cup fresh strawberries, pureed (optional, for a fruity flavor)

Instructions

Prepare the Crust: In a medium bowl, mix crushed pink Oreo cookies with melted butter until well blended. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Place it in the refrigerator to set for about 15 minutes.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add powdered sugar, mixing until fully incorporated. Then, add vanilla extract and continue to blend until combined.

Add Color: If using, blend in the fresh strawberry puree to the cream cheese mixture for added flavor. Gradually mix in pink food coloring until you achieve the desired shade of pink.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until just combined, being careful not to deflate the whipped cream.

Combine: Pour the creamy filling over the prepared Oreo crust in the springform pan, smoothing the top with a spatula.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, chill overnight.

Serve: Once set, carefully remove the springform pan. Garnish the top with additional crushed pink Oreos and fresh strawberries, if desired. Cut into slices and enjoy!
