Pineapple Upside-Down Cheesecake with Caramelized Pineapple

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1 tablespoon sugar

8 oz cream cheese, softened

1/2 cup sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

1/4 cup crushed pineapple, drained

1 cup fresh pineapple, sliced (for topping)

1/2 cup brown sugar

1/4 cup unsalted butter (for caramelizing)

Maraschino cherries (for garnish, optional)

Instructions
 

Preheat your oven to 325°F (160°C).

    In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.

      Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create a crust. Set aside.

        In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

          Gradually add in the sugar and vanilla extract, continuing to mix until well incorporated.

            Add the eggs one at a time, mixing on low speed until just combined to avoid overmixing.

              Carefully fold in the sour cream and crushed pineapple until fully blended.

                Pour the cheesecake filling over the prepared crust in the springform pan.

                  Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggles. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

                    Remove from the oven and let it cool completely on the counter before refrigerating for at least 4 hours or overnight.

                      In a skillet, melt the 1/4 cup of unsalted butter over medium heat. Add the brown sugar and stir until dissolved.

                        Add the fresh pineapple slices and cook for about 4-5 minutes, turning occasionally until they are caramelized and golden. Remove from heat.

                          Once the cheesecake is fully set, carefully remove the sides of the springform pan.

                            Arrange the caramelized pineapple slices on top of the cheesecake, and garnish with maraschino cherries if desired.

                              Slice and serve chilled.
