1 cup fresh pineapple juice

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup crushed pineapple, drained

1 tsp vanilla extract

1/2 cup shredded coconut (optional)

1/4 cup chopped pecans or walnuts (for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.

      Add the eggs, one at a time, beating well after each addition. Pour in the vanilla extract and mix until combined.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the butter mixture, alternating with the fresh pineapple juice. Start and end with the dry ingredients. Mix until just combined.

            Fold in the crushed pineapple and shredded coconut, if using, ensuring they're evenly distributed in the batter.

              Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle the chopped pecans or walnuts on top.

                Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
