1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup crushed pineapple, drained (reserve juice)

1/4 cup pineapple juice (reserved from the crushed pineapple)

1/2 cup shredded coconut (optional)

1/2 cup chopped walnuts or pecans (optional)

1 cup cream cheese, softened

1 cup powdered sugar

1/2 teaspoon vanilla extract (for frosting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or cooking spray and line the bottom with parchment paper.

    Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until the mixture becomes light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, blending well after each addition.

          Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the butter mixture, alternating with the crushed pineapple and pineapple juice until just combined. Do not overmix. If you are using shredded coconut and nuts, fold them in gently.

            Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

              Cool Down: Remove from the oven and let the cake cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

                Prepare Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and well combined.
