Instructions
Rinse the chicken breasts under cold water and pat them dry with a paper towel.
Season both sides of the chicken breasts with salt, pepper, onion powder, minced garlic, and ground ginger.
Place the chicken breasts in the crockpot.
In a separate bowl, mix together the pineapple juice, BBQ sauce, soy sauce, and pineapple chunks until well combined.
Pour the pineapple BBQ sauce mixture over the chicken in the crockpot, ensuring the chicken is well coated.
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
Once cooked, shred the chicken using two forks and stir it back into the sauce to combine.
Serve hot, garnished with fresh cilantro for a pop of color and freshness.
Notes
Serve the shredded chicken over rice or in slider buns with extra BBQ sauce.
