2 slices sourdough bread

2 tablespoons butter, softened

2 slices cheddar cheese

2 tablespoons dill pickle relish

2-3 dill pickle slices

1 tablespoon mayonnaise

Black pepper to taste

Prep the Ingredients: Spread mayonnaise on one side of each slice of sourdough bread. This will be the outside of the sandwich for a crispy finish.

    Assemble the Sandwich: On the other side of one slice, layer a slice of cheddar cheese, followed by dill pickle relish, and a few dill pickle slices. Top with the second slice of cheddar cheese. Place the other slice of bread on top, mayonnaise side out.

      Heat the Skillet: Heat a skillet over medium heat. Once hot, add a tablespoon of butter, allowing it to melt and coat the pan.

        Cook the Sandwich: Carefully place the assembled sandwich in the skillet. Cook for about 3-4 minutes or until the bottom is golden brown and the cheese is starting to melt.

          Flip and Finish: Add the remaining tablespoon of butter to the skillet. Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is fully melted.

            Slice and Serve: Remove the sandwich from the skillet and let it cool for a minute. Cut diagonally and serve warm, with extra dill pickle slices on the side if desired.
