2 large russet potatoes, cut into fries

1 tablespoon olive oil

Salt and pepper to taste

1/2 pound ribeye steak, thinly sliced

1 bell pepper, sliced (any color)

1 small onion, thinly sliced

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup provolone cheese, shredded

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Fries: Preheat your oven to 425°F (220°C). Toss the cut potatoes in a large bowl with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet.

    Bake the Fries: Bake the fries in the preheated oven for 30-35 minutes, flipping halfway through until they are golden brown and crispy.

      Cook the Steak: While the fries are baking, heat a skillet over medium-high heat. Add the sliced ribeye steak and season with salt, pepper, garlic powder, and smoked paprika. Cook for about 3-4 minutes until just browned.

        Add Veggies: Add the sliced bell pepper and onion to the skillet with the steak. Sauté for an additional 3-4 minutes until the vegetables are soft. Remove from heat.

          Assemble the Fries: Once the fries are done, take them out of the oven and transfer them to a serving platter. Pile the steak and vegetable mixture generously over the fries.

            Melt the Cheese: Sprinkle the shredded provolone cheese on top of the loaded fries and return them to the oven for 3-5 minutes until the cheese is melted and bubbly.

              Finish and Serve: Remove from oven, garnish with chopped fresh parsley, and enjoy your cheesy, meaty creation!
