1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 (8 oz) packages of Philadelphia cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1/4 cup sour cream

1 tablespoon lemon juice

A pinch of salt

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.

    Press the crust: Press the crumb mixture into the bottom of a greased 8x8-inch baking dish evenly using the back of a measuring cup. Bake for 8-10 minutes until lightly golden and crisp. Remove from oven and allow to cool slightly.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in 1 cup sugar, continuing to beat until well combined and fluffy.

        Incorporate the eggs: Add eggs, one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

          Flavor the filling: Stir in the vanilla extract, sour cream, lemon juice, and a pinch of salt until the mixture is smooth.
