The foundation of the Pesto Feta Rolls is the choice of bread, and flatbread or pita bread serves as the ideal vessel for the delicious fillings. Flatbread is known for its soft and pliable texture, allowing it to be easily rolled without cracking. It provides a delightful chewiness that complements the creamy and tangy flavors of the filling. Pita bread, on the other hand, adds an extra layer of authenticity to the rolls, with its pocket-like shape making it easy to stuff with ingredients. Whichever you choose, both options offer a neutral base that allows the vibrant flavors of the fillings to shine through.

Ingredients

1 large flatbread or pita bread

1/2 cup basil pesto

1 cup crumbled feta cheese

1/2 cup sun-dried tomatoes, chopped

1/4 cup roasted red peppers, chopped

1/4 teaspoon garlic powder

Fresh black pepper to taste

Fresh basil leaves for garnish

Instructions

Lay the flatbread or pita bread on a clean, flat surface.

Spread the basil pesto evenly over the entire surface of the bread, ensuring it covers to the edges.

In a small bowl, mix the crumbled feta, chopped sun-dried tomatoes, roasted red peppers, garlic powder, and freshly ground black pepper.

Spoon the feta mixture evenly over the pesto-coated bread, spreading it from one end to the other.

Starting at one edge, carefully roll the bread tightly, forming a log shape.

Use a sharp knife to slice the roll into approximately 1-inch thick pieces.

Arrange the slices on a serving platter and garnish with fresh basil leaves for a pop of color.

Serve immediately or cover and refrigerate for up to an hour for the flavors to meld.
