4 chicken thighs, bone-in and skin-on

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 bunch fresh cilantro, stems removed

1 jalapeño, seeds removed for mild or kept for heat

3 tablespoons mayonnaise

2 tablespoons Greek yogurt

1-2 tablespoons lime juice (to taste)

1 clove garlic, minced

1/4 cup chicken broth

Fresh lime wedges, for serving

Instructions
 

Preheat your oven to 425°F (220°C).

    In a small bowl, mix together the olive oil, cumin, paprika, garlic powder, salt, and pepper to create a marinade.

      Rub the marinade generously all over the chicken thighs, ensuring to get some under the skin.

        Place the chicken on a baking sheet lined with parchment paper and roast in the oven for about 35-40 minutes, or until the skin is golden and the internal temperature reaches 165°F (75°C).

          While the chicken is roasting, prepare the verde sauce. In a blender, combine the cilantro, jalapeño, mayonnaise, Greek yogurt, lime juice, minced garlic, and chicken broth. Blend until smooth, adding more broth if necessary to reach your desired sauce consistency.

            Taste the sauce and adjust seasoning if needed, adding salt or more lime juice if desired.

              Once the chicken is cooked, let it rest for 5 minutes. Serve it hot, drizzled with the verde sauce.

                Garnish with fresh lime wedges on the side for an extra zesty kick.
