1 packet (2 ¼ tsp) active dry yeast

1 tablespoon sugar

3 cups all-purpose flour

1 teaspoon salt

1 tablespoon olive oil

8 ounces sliced pepperoni

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Marinara sauce (for dipping)

Instructions
 

In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy.

    In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

      Mix the ingredients using a wooden spoon or your hands until a dough begins to form.

        Transfer the dough to a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.

          Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

            Preheat your oven to 375°F (190°C).

              Once risen, punch down the dough and roll it out into a rectangle about 1/4 inch thick.

                Lay the pepperoni slices evenly over the dough, leaving a small border around the edges. Sprinkle the shredded mozzarella cheese and Italian seasoning over the pepperoni, followed by the crushed red pepper flakes if using.

                  Starting from one edge, carefully roll the dough tightly into a log. Pinch the edges to seal and place seam-side down.

                    Slice the roll into 1-inch thick pieces and arrange them on a baking sheet lined with parchment paper.

                      Bake for 20-25 minutes or until golden brown and the cheese is bubbly.

                        Remove from the oven and let cool slightly before serving. Serve with marinara sauce for dipping.
