Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt. Mix well to combine.
In a separate bowl, whisk together the creamy peanut butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the peanut butter mixture into the bowl with the dry ingredients and stir until fully combined. The mixture should be thick but pliable.
Fold in the chocolate chips and any optional chopped nuts you desire.
Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
Place the formed energy bites onto a baking sheet lined with parchment paper or a plate.
Once all the mixture is rolled, refrigerate the energy bites for at least 30 minutes to firm up.
Store the bites in an airtight container in the fridge for up to a week or freeze for longer storage.
