Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar. Mix until smooth and creamy.
Add in the egg and vanilla extract, then beat until well combined.
In a separate bowl, whisk together the baking soda and salt.
Gradually add the dry mixture to the wet ingredients, mixing until just combined.
If you're using chocolate chips and crushed peanuts, gently fold them into the dough.
Drop tablespoon-sized balls of cookie dough onto the prepared baking sheet, leaving enough space between each for spreading.
Using a fork, press down on each cookie to flatten them slightly, creating a crisscross pattern.
Bake in the preheated oven for 10-12 minutes until the edges are golden and the centers are still soft.
Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve the cookies on a decorative platter, and for a delightful touch, dust with a light sprinkle of powdered sugar or drizzle with extra melted chocolate.
