1 cup jasmine or basmati rice

2 cups vegetable broth (or chicken broth)

3 tablespoons unsalted butter

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 teaspoon garlic powder

Salt and pepper to taste

Zest of 1 lemon (for freshness)

Instructions
 

Rinse the rice under cold water in a fine mesh strainer until the water runs clear. This helps to remove excess starch.

    In a medium saucepan, bring the vegetable or chicken broth to a boil over medium-high heat.

      Once boiling, add the rinsed rice and a pinch of salt. Stir, cover with a lid, and reduce the heat to low. Allow it to cook for about 15 minutes, or until the rice has absorbed all the liquid. Remove from heat and let it sit for 5 minutes covered.

        In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant; do not let it brown.

          Remove from heat and stir in lemon zest, garlic powder, and a pinch of salt and pepper.

            Fluff the cooked rice with a fork, then pour the garlic butter mixture over the rice, adding the grated Parmesan cheese and chopped parsley. Gently fold everything together until well combined.

              Taste and adjust seasoning with additional salt and pepper if necessary.
