2 salmon fillets (6 oz each)

2 cups fresh spinach, washed and roughly chopped

1 cup heavy cream

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1 teaspoon lemon zest

Salt and pepper to taste

Fresh basil leaves for garnish

Prep the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

    Heat the Pan: In a large skillet, heat the olive oil and butter over medium-high heat until hot.

      Cook the Salmon: Place the salmon fillets skin-side down in the hot skillet. Sear for 4-5 minutes without moving them to achieve a nice crust. Flip and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove fillets from the pan and set aside.

        Sauté Garlic and Spinach: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2 minutes.

          Make the Sauce: Pour in the heavy cream, stirring to combine. Add the lemon zest and grated Parmesan cheese, stirring until the cheese has melted and the sauce thickens slightly. If needed, season with additional salt and pepper.

            Add Cherry Tomatoes: Gently fold in the halved cherry tomatoes, allowing them to warm up for about 1 minute.

              Combine: Return the salmon fillets to the skillet, spooning the creamy spinach sauce over them to coat. Allow everything to heat through for an additional minute.
