6 slices of whole-grain bread, cubed

8 large eggs

2 cups milk (dairy or plant-based)

1 cup shredded cheddar cheese

1 cup diced bell peppers (mix of colors)

1 cup cooked and crumbled breakfast sausage (or veggie sausage)

1 small red onion, finely chopped

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

In a large mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper until well combined.

    Spray a 9x13-inch baking dish with non-stick cooking spray. Layer the cubed whole-grain bread evenly across the bottom of the dish.

      In a separate bowl, mix the cooked sausage, bell peppers, red onion, and half of the cheddar cheese. Scatter this mixture on top of the bread cubes.

        Pour the egg and milk mixture evenly over the bread and filling. Gently press down with a spatula to ensure the bread absorbs the egg mixture.

          Sprinkle the remaining cheddar cheese on top. Cover the baking dish with plastic wrap and refrigerate overnight (or at least 4 hours) to allow the flavors to meld.

            Preheat your oven to 350°F (175°C). Remove the plastic wrap and bake the casserole for 45-50 minutes, until the center is set and the top is golden brown.

              Once baked, let it cool for about 10 minutes. Garnish with chopped fresh parsley before slicing and serving.
