Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it up as it cooks, about 5-7 minutes.
Stir in the diced onion and minced garlic. Cook until the onion is translucent, about 2-3 minutes.
Add the taco seasoning and a splash of water if needed. Stir well and let it simmer for another 2 minutes.
Mix in the black beans and corn, stirring to combine. Remove from heat.
Place the taco shells upright in a baking dish. Evenly distribute the meat mixture into each taco shell.
Top each filled taco with shredded cheddar cheese.
Bake in the preheated oven for 15-20 minutes until the cheese is bubbly and lightly golden.
Remove from the oven, top with diced tomatoes and fresh cilantro if desired. Serve hot with sour cream and salsa on the side.
