Ingredients
  

1 cup orzo pasta

2 cups vegetable broth

1 cup broccoli florets

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 bell pepper (red or yellow), diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon lemon zest

2 tablespoons lemon juice

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions
 

Cook the Orzo: In a medium pot, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions (usually about 8-10 minutes) until al dente. Drain and set aside, reserving a bit of the broth.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.

      Add the Veggies: Toss in the broccoli, zucchini, and bell pepper into the skillet. Sauté for approximately 4-5 minutes until the vegetables are tender but still vibrant and crisp.

        Incorporate the Tomatoes: Add the halved cherry tomatoes and cook for another 2-3 minutes. The tomatoes should just begin to soften.

          Combine Everything: Stir in the cooked orzo, along with the reserved broth if needed for moisture. Add the lemon zest and lemon juice, and mix well. Season with salt and pepper to taste.

            Garnish and Serve: Turn off the heat and sprinkle grated Parmesan cheese over the top if using. Toss gently until combined. Serve immediately, garnished with fresh basil leaves.
