One Pot Spicy Sausage Pasta

12 oz. penne pasta

1 lb. spicy Italian sausage, casings removed

1 red bell pepper, diced

1 yellow onion, chopped

3 cloves garlic, minced

1 can (14 oz.) diced tomatoes

4 cups chicken broth

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon Italian seasoning

1/2 cup heavy cream

1 cup spinach leaves

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Instructions
 

In a large pot or Dutch oven, heat over medium heat. Add the spicy sausage, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

    Once the sausage is browned, add the diced bell pepper, chopped onion, and minced garlic. Sauté for 3-4 minutes, until the vegetables become tender.

      Stir in the diced tomatoes (with juices), chicken broth, penne pasta, red pepper flakes, and Italian seasoning. Bring the mixture to a boil.

        Once boiling, reduce the heat to low, cover, and simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

          Remove the pot from heat and stir in the heavy cream and spinach. Mix until the spinach wilts and is well incorporated.

            Taste and adjust seasoning with salt and pepper as needed.

              Serve hot, garnished with fresh basil and a sprinkle of grated Parmesan cheese on top.
