1 lb Italian sausage (mild or spicy, based on preference)

1 tablespoon olive oil

1 medium onion, diced

2 garlic cloves, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon smoked paprika

¼ teaspoon red pepper flakes (optional)

4 cups chicken broth

1 ½ cups orzo pasta

1 cup spinach, roughly chopped

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnishing

Instructions
 

In a large pot over medium heat, add the olive oil. Once hot, crumble in the Italian sausage and cook for about 5-7 minutes or until browned and cooked through. Use a wooden spoon to break it apart while it cooks.

    Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Stir in the diced bell pepper and zucchini. Cook for an additional 3-4 minutes until they begin to soften.

        Toss in the halved cherry tomatoes, dried oregano, smoked paprika, and red pepper flakes (if using). Stir everything together for about 2 minutes to combine the flavors.

          Pour in the chicken broth and bring the mixture to a gentle boil.

            Once boiling, add the orzo pasta. Stir well and reduce the heat to low. Cover the pot and let it simmer for about 12-15 minutes, or until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

              When the orzo is cooked, fold in the chopped spinach and grated Parmesan cheese. Mix well until the spinach wilts and the cheese melts.

                Season with salt and pepper to taste.

                  Remove from heat and let the pot sit for a couple of minutes before serving to thicken slightly.
