12 oz penne pasta

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup sliced pepperoni

1 can (15 oz) diced tomatoes

2 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.

    Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes until softened.

      Add the sliced pepperoni and cook for another 2-3 minutes until slightly crispy.

        Pour in the diced tomatoes (with juice), vegetable broth, dried oregano, dried basil, and red pepper flakes (if using). Stir to combine.

          Bring the mixture to a boil and add the penne pasta. Stir well and reduce the heat to low. Cover the pot and simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

            Remove the pot from the heat and stir in the shredded mozzarella cheese until melted and evenly distributed. Adjust seasoning with salt and pepper if needed.

              Let the dish sit for a few minutes to thicken before serving.
