12 oz (340g) spaghetti or linguine

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes

Zest of 1 lemon

2 cups vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup frozen peas (or fresh if preferred)

Salt and pepper to taste

Fresh parsley, chopped for garnish

In a large pot or skillet, heat the olive oil over medium heat.

    Add the minced garlic and red pepper flakes, sauté for about 1-2 minutes until fragrant (but not browned).

      Stir in the lemon zest, then add the uncooked spaghetti and pour in the vegetable broth and heavy cream.

        Bring the mixture to a gentle boil, then reduce the heat to medium-low. Stir occasionally, cooking the pasta for about 10-12 minutes until al dente, and the liquid has reduced and thickened slightly.

          Once the pasta is cooked, stir in the grated Parmesan, letting it melt into the sauce. If the mixture feels too thick, add a splash of water or broth.

            Fold in the frozen peas and season with salt and pepper to taste. Let everything simmer for another 2-3 minutes until heated through.

              Remove from heat and let it sit for a couple of minutes as it will thicken a bit more.

                Serve warm, garnished with chopped parsley and additional Parmesan if desired.
