1 medium green cabbage, chopped

1 large onion, diced

3 cloves garlic, minced

2 large carrots, diced

3 medium potatoes, peeled and cubed

4 cups vegetable broth

1 cup heavy cream or coconut cream for a vegan option

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the chopped cabbage, diced carrots, and cubed potatoes to the pot. Stir well to combine and cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.

        Pour in the vegetable broth, and add the dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are fully tender.

          Once the vegetables are cooked, use an immersion blender to carefully blend the soup until smooth and creamy. Alternatively, you can transfer batches to a blender, but be cautious of hot liquid.

            Stir in the heavy cream or coconut cream, and let the soup simmer for an additional 5 minutes on low heat, adjusting seasoning if necessary.
