4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

6 cloves garlic, minced

1/4 cup grated Parmesan cheese

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Mix well.

      Add the chicken thighs to the bowl and toss to coat them evenly with the garlic olive oil mixture.

        Place the halved baby potatoes in the same bowl and toss them with the remaining marinade until they are well coated.

          On a large baking sheet, arrange the chicken thighs and potatoes in a single layer. Make sure the chicken is skin-side up, and the potatoes are cut side down to promote crispness.

            Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.

              Roast in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.

                Once cooked, remove from the oven and let it rest for 5 minutes.

                  Garnish with freshly chopped parsley before serving.
