1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup uncooked rice (preferably jasmine or basmati)

2 cups chicken broth

1 cup shredded cheddar cheese

1/2 cup chopped fresh cilantro

Salt and pepper to taste

Optional toppings: sliced jalapeños, avocado, sour cream, or lime wedges

Instructions
 

Sauté the Chicken: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced chicken, season lightly with salt and pepper, and sauté until golden brown, about 5-7 minutes.

    Add the Vegetables: Stir in the chopped onion and minced garlic, cooking for another 2-3 minutes until the onion is translucent.

      Mix in Remaining Ingredients: Add the red bell pepper, black beans, corn, diced tomatoes with green chilies, taco seasoning, uncooked rice, and chicken broth. Mix well to combine all the ingredients.

        Simmer: Bring the mixture to a gentle boil, then reduce the heat to low, cover the skillet, and simmer for about 20 minutes. Stir occasionally to prevent sticking and ensure the rice cooks evenly.

          Add Cheese: After the rice has absorbed most of the liquid and is fully cooked, sprinkle the shredded cheddar cheese on top. Cover again with the lid and allow the cheese to melt for about 5 minutes.
