8 oz penne pasta

2 tablespoons olive oil

1 small red onion, finely chopped

3 cloves garlic, minced

1 medium zucchini, diced

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 can (15 oz) chickpeas, drained and rinsed

1 teaspoon dried oregano

1 teaspoon dried basil

Red pepper flakes (to taste)

Salt and pepper, to taste

1 cup baby spinach

1/4 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until softened.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add the diced zucchini and bell pepper to the skillet. Sauté for approximately 5-6 minutes until the vegetables are tender.

          Incorporate the cherry tomatoes and chickpeas, stirring well. Cook for another 3-4 minutes until the tomatoes begin to soften.

            Sprinkle in the dried oregano, dried basil, red pepper flakes, salt, and pepper, mixing everything thoroughly.

              Add the cooked penne pasta to the skillet, along with the baby spinach. Toss to combine until the spinach wilts and the pasta is heated through, about 2-3 minutes.

                Remove from heat and gently fold in the feta cheese. Adjust seasoning if needed.

                  Serve immediately, garnished with chopped fresh parsley.
