3 cups all-purpose flour

1 packet (2 ¼ teaspoons) instant dry yeast

1 teaspoon sugar

1 teaspoon salt

1 cup warm water (110°F/43°C)

⅓ cup extra virgin olive oil

1 cup mixed olives (green, black, and kalamata), pitted and chopped

1 tablespoon fresh rosemary, finely chopped

1 tablespoon lemon zest

1 teaspoon garlic powder

Instructions
 

In a large mixing bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5 minutes until it becomes frothy.

    In a separate bowl, mix together the flour, salt, garlic powder, chopped olives, rosemary, and lemon zest. Create a well in the center of the dry ingredients.

      Pour the frothy yeast mixture and olive oil into the well. Using a wooden spoon or your hands, mix until a shaggy dough forms.

        Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. If the dough sticks, sprinkle with a little more flour as needed.

          Place the kneaded dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

            Preheat your oven to 375°F (190°C).

              Once the dough has risen, gently punch it down to release the air. Shape the dough into a loaf and place it in a greased 9x5 inch loaf pan.

                Cover the loaf with a towel and let it rise for another 30 minutes.

                  Bake the bread in the preheated oven for about 30-35 minutes or until the top is golden brown and sounds hollow when tapped.

                    Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
