2 cups all-purpose flour

3/4 cup buttermilk, cold

Instructions
 

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs with some pea-sized pieces of butter still visible.

        Make a well in the center of the mixture and pour in the cold buttermilk and honey (if using). Stir gently with a fork until the dough begins to come together.

          Turn the dough out onto a lightly floured surface. Knead gently just a few times until it forms a cohesive ball—do not overwork the dough!

            Pat the dough to about 1-inch thick. Use a round biscuit cutter to cut out biscuits, reworking the scraps as needed to cut out additional biscuits.

              Place the biscuits on the prepared baking sheet, close together but not touching. For a golden crust, brush the tops with a little extra buttermilk or melted butter if desired.

                Bake in the preheated oven for 12-15 minutes, or until golden brown on top.
