Instructions
In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and creamy.
In a separate bowl, gently fold in the whipped cream to the yogurt mixture until it's light and fluffy, being careful not to deflate it.
Prepare serving cups or a large dish for layering. Start by adding a layer of granola or crushed graham crackers at the bottom. About 2-3 tablespoons should work well.
Spoon a generous layer of the yogurt-whipped cream mixture on top of the granola layer, smoothing it out with the back of a spoon.
Add a layer of mixed berries over the yogurt layer, distributing them evenly. You can slice the strawberries into smaller pieces for a better visual appeal and easier eating.
Repeat the layers (granola, yogurt, berries) until you fill the cups or dish, finishing with a yogurt layer on top.
For a beautiful finish, top the final layer with a few more mixed berries and a sprig of fresh mint.
Refrigerate the assembled dessert for at least 1 hour to set and chill. Serve cold.
Notes
Serve in clear glass cups to showcase the beautiful layers. Garnish with an extra mint leaf and a strawberry or two for added color.
