Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 teaspoons sugar

8 oz cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

Zest of 1 orange

½ cup fresh orange juice

2 tablespoons gelatin powder

¼ cup water

Instructions

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until the crumbs are well-coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Refrigerate while you prepare the filling.

Bloom the Gelatin: In a small bowl, sprinkle the gelatin powder over ¼ cup of cold water. Let it sit for about 5 minutes until it swells and becomes spongy.

Mix the Filling: In a large mixing bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Add the vanilla extract, orange zest, and fresh orange juice. Mix until completely combined.

Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain—this will give your cheesecake a light and airy texture.

Combine Gelatin: Gently heat the bloomed gelatin in the microwave for about 10-15 seconds until it is fully dissolved and liquid. Allow it to cool slightly before slowly drizzling it into the cheesecakes filling, stirring constantly to prevent clumping.

Assemble the Cheesecake: Pour the orange cream cheese filling over the prepared graham cracker crust. Smooth the top with a spatula, then tap the pan lightly on the counter to release any air bubbles.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow it to set completely.

Serve: Once fully set, carefully remove the sides of the springform pan. Slice the cheesecake into desired pieces and serve chilled. For an extra touch, garnish with whipped cream and slices of fresh orange or orange zest on top.
