1 ½ cups graham cracker crumbs

¼ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 tablespoon lemon juice

Fresh berries (strawberries, blueberries, or raspberries) for garnish

Mint leaves for garnish

Instructions
 

In a mixing bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand.

    Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to form the crust. Use a flat-bottomed glass to ensure it’s evenly spread.

      In another bowl, beat the softened cream cheese until smooth and creamy.

        Add the powdered sugar and vanilla extract to the cream cheese and beat until fully combined.

          In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.

            Add the lemon juice and fold gently to incorporate it without deflating the whipped cream too much.

              Spread the cream cheese filling over the prepared crust, smoothing the top with a spatula.

                Cover the cheesecake with plastic wrap and refrigerate for at least 6 hours or overnight to set.

                  Once set, carefully remove the sides of the springform pan.
