Ingredients

cooked quinoa

black beans, rinsed and drained

corn, frozen or canned

red bell pepper, diced

avocado, diced

teaspoon
cumin

teaspoon
chili powder

tablespoons
lime juice
to taste
salt and pepper

tortillas (whole wheat or corn)
for garnish
fresh cilantro
Instructions
In a large mixing bowl, combine the cooked quinoa, black beans, corn, and diced red bell pepper.
Sprinkle cumin and chili powder over the mixture, then drizzle the lime juice. Stir until well combined.
Add salt and pepper to taste, adjusting seasoning as necessary.
Lay a tortilla flat on a clean surface and spoon a generous amount of the mixture onto the center of the tortilla.
Add a few diced avocado pieces on top of the filling.
Fold the sides of the tortilla inward, then roll it tightly from the bottom to form a burrito.
Repeat with the remaining tortillas and filling.
If desired, lightly toast the burritos on a skillet over medium heat for 2-3 minutes per side to get a crispy exterior.
Garnish with fresh cilantro before serving.
