Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons sugar

2 ripe bananas, sliced

1 cup milk

1 cup heavy cream, divided

1/3 cup granulated sugar

1 teaspoon vanilla extract

3 tablespoons cornstarch

Pinch of salt

1 egg yolk

Whipped cream, for topping

Chocolate shavings, for garnish

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture into the bottoms of muffin tins to form mini crusts. Bake for about 8-10 minutes until golden. Remove and let cool.

Make the Filling: In a medium saucepan, mix together the milk, 3/4 cup of heavy cream, granulated sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until the mixture thickens and begins to bubble, about 5-7 minutes.

Add Egg Yolk: Once thickened, remove from heat and whisk in the egg yolk and vanilla extract until smooth. Let this mixture cool slightly.

Assemble the Pies: Once the crusts are cool, place a layer of banana slices in the bottom of each pie crust. Pour the warm vanilla pudding mixture over the banana slices, filling each crust.

Chill: Refrigerate the mini pies for at least 2 hours or until the filling is set.

Top and Serve: Before serving, whip the remaining 1/4 cup of heavy cream until soft peaks form. Pipe or spoon the whipped cream over the mini pies. Finish with chocolate shavings for a decorative touch.

Prep Time: 30 minutes | Total Time: 2 hours 30 minutes | Servings: 12 mini pies

                - Presentation Tips: Serve the mini pies on a colorful platter, and consider garnishing with a slice of banana and a mint leaf for an added pop of color.
