4 boneless, skinless chicken thighs

1/4 cup Caesar dressing

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

2 cups romaine lettuce, chopped

Lemon wedges for serving

Fresh parsley, chopped, for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a bowl, combine the Caesar dressing, minced garlic, oregano, salt, and pepper. Mix well.

      Add the chicken thighs to the bowl, ensuring they are well coated in the dressing mixture. Marinate for at least 15 minutes to allow the flavors to infuse.

        In another bowl, combine the grated Parmesan cheese and breadcrumbs. Mix until the cheese is well integrated with the breadcrumbs.

          Take each marinated chicken thigh and press it into the breadcrumb mixture, ensuring both sides are fully coated.

            Place the coated chicken thighs on the prepared baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.

              While the chicken is baking, prepare the salad. In a large bowl, toss the chopped romaine lettuce with a drizzle of Caesar dressing and some additional Parmesan cheese to taste.

                Once the chicken is done, remove it from the oven and let it rest for a few minutes before slicing it into strips.

                  Serve the sliced Caesar chicken over the dressed romaine salad. Garnish with fresh parsley and lemon wedges.
