Ingredients

4 boneless, skinless chicken breasts

4 tablespoons unsalted butter, divided

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, thyme, rosemary, and smoked paprika. Allow them to sit at room temperature for about 15 minutes.

Make Herb Butter: In a small bowl, mix together 2 tablespoons of softened butter, minced garlic, and lemon juice. Set aside.

Sear the Chicken: In a large skillet, heat olive oil and the remaining 2 tablespoons of butter over medium-high heat. Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side, until they are golden brown and cooked through (internal temperature should reach 165°F/75°C).

Add the Herb Butter: Once the chicken is nearly finished cooking, lower the heat and add the herb butter mixture to the skillet. Allow it to melt and coat the chicken, basting it a few times to infuse flavor.

Rest the Chicken: Remove the chicken from the skillet and let it rest for 5 minutes to ensure juiciness.

Serve: Slice the chicken breasts and drizzle any leftover herb butter from the skillet on top. Garnish with fresh parsley.
