4 fillets of white fish (e.g., cod or tilapia)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

2 garlic cloves, minced

1 lemon, sliced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup pitted Kalamata olives, sliced

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a baking dish, drizzle 1 tablespoon of olive oil to coat the bottom.

      Place the fish fillets in the dish and season them with salt, pepper, oregano, thyme, and minced garlic on both sides.

        Lay the lemon slices on top of the fish.

          Surround the fish with cherry tomatoes, red onion slices, and Kalamata olives. Drizzle the remaining tablespoon of olive oil across the vegetables.

            Cover the baking dish with aluminum foil to keep the moisture in.

              Bake in the preheated oven for about 20-25 minutes or until the fish is opaque and flakes easily with a fork.

                Remove the foil and switch the oven to broil for an additional 2-3 minutes to slightly char the top of the fish and veggies for added flavor.

                  Once done, remove from the oven and let it rest for 5 minutes. Sprinkle fresh parsley on top before serving.
