1 tablespoon honey or agave syrup

1/2 cup unsweetened cocoa powder, for dusting

1/4 cup finely chopped nuts (such as almonds or pecans) for additional texture (optional)

Instructions
 

Begin by placing the chopped dark chocolate in a heatproof bowl.

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat immediately.

      Pour the hot cream over the chopped dark chocolate and let it sit for 2-3 minutes to melt the chocolate.

        After the chocolate has melted, stir gently until smooth and well combined.

          Add in the vanilla extract, ground cinnamon, cayenne pepper, and honey/agave syrup to the chocolate mixture. Stir until everything is fully incorporated.

            Cover the mixture with plastic wrap and refrigerate for about 1-2 hours, or until the chocolate is firm enough to scoop.

              Once ready, use a small cookie scoop or your hands to portion out the truffle mixture. Roll each portion into a ball about 1 inch in diameter.

                Roll the truffles in cocoa powder to coat them evenly. For additional crunch, you can roll some in chopped nuts instead.

                  Place the finished truffles on a parchment-lined baking tray and return them to the fridge to set for another 30 minutes.
