1 cup rolled oats

1/4 cup raw honey or maple syrup

1/4 cup almond butter (or any nut butter of your choice)

2 tablespoons matcha green tea powder

1/4 cup shredded coconut (unsweetened)

1/4 cup mini chocolate chips (optional)

1/4 teaspoon sea salt

1 teaspoon vanilla extract

Instructions
 

In a large mixing bowl, combine the rolled oats, matcha green tea powder, and sea salt. Stir well to ensure the matcha is evenly dispersed throughout the oats.

    In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

      Pour the wet mixture into the dry ingredients, using a spatula to fold everything together until fully combined. If using chocolate chips, gently fold them in at this stage.

        Once mixed, form small balls (about 1 inch in diameter) with your hands and place them on a parchment-lined baking sheet or plate.

          Once all the mixture is formed into bites, place in the fridge for at least 30 minutes to firm up.

            After chilling, serve or transfer bites to an airtight container. They can be stored in the refrigerator for up to one week.
