Ingredients

1 ½ lbs ground beef (or turkey)

1 cup breadcrumbs

1 large onion, finely chopped

2 cloves garlic, minced

1 egg

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

2 cups mashed potatoes (prepared)

1 cup shredded cheddar cheese

½ cup milk

1 tablespoon butter

Chopped parsley for garnish

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, Worcestershire sauce, dried thyme, salt, and pepper. Mix until well combined.

Form the meat mixture into a loaf shape and place it in a lightly greased 9x13 inch casserole dish.

Bake the meatloaf in the preheated oven for 30 minutes.

While the meatloaf is baking, prepare the mashed potatoes if they aren’t ready yet. In a saucepan, add the prepared mashed potatoes, milk, and butter, then stir until creamy and smooth.

After the meatloaf has baked for 30 minutes, remove it from the oven and carefully spread the mashed potatoes evenly over the top.

Sprinkle the shredded cheddar cheese on top of the mashed potatoes.

Return the casserole to the oven and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

Once baked, remove the casserole from the oven and let it sit for about 5 minutes.

Garnish with chopped parsley before serving.
