2 boneless, skinless chicken breasts

8 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Start by cooking the fettuccine pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

      In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side until cooked through and golden. Remove from the skillet and set aside.

        In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

          Add the cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.

            Pour in the heavy cream, stirring constantly. Allow the mixture to simmer for 2-3 minutes until it begins to thicken.

              Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

                Slice the cooked chicken into strips and return it to the skillet along with the cooked fettuccine. Toss everything together gently to coat in the creamy sauce.

                  If you like a little heat, add red pepper flakes and adjust salt and pepper to taste.

                    Serve immediately, garnished with fresh basil leaves on top.
