2 boneless, skinless chicken breasts

8 oz fettuccine pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Start by boiling a large pot of salted water. Once boiling, add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.

    While the pasta is cooking, heat the olive oil in a large pan over medium-high heat. Season the chicken breasts with salt and pepper on both sides.

      Add the chicken to the pan and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the pan and let it rest for a few minutes, then slice into strips.

        In the same pan, add the minced garlic and sauté for about 30 seconds or until fragrant. Then add the cherry tomatoes and sun-dried tomatoes, cooking until the cherry tomatoes start to soften, about 3-4 minutes.

          Pour in the heavy cream and add the Italian seasoning and red pepper flakes. Stir well to combine and bring to a gentle simmer, cooking for about 2-3 minutes until the sauce thickens slightly.

            Add the cooked fettuccine and sliced chicken to the sauce, tossing to combine everything. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.

              Remove from heat and serve immediately, garnished with fresh basil leaves for a vibrant finish.
