In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and sauté for 3-4 minutes until softened.
Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.
Sprinkle in the smoked paprika, cumin, and oregano, stirring well to combine.
Pour in the diced tomatoes and vegetable broth, stirring until everything is mixed.
Add the butter beans to the skillet, gently stirring to coat them in the sauce.
Bring to a simmer and cook for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Fold in the spinach and cook for an additional 2-3 minutes until wilted.
Season with salt and pepper to taste.
Remove from heat and let it cool slightly before serving.
Notes
Serve in a rustic bowl, topped with freshly chopped parsley. Pair with crusty bread or a fresh garden salad.
